This month, we’re buzzing with excitement to feature our supplier, Waggle Dance Honey, produced by Portadown-based beekeeper Lyndon Wortley.
Lyndon, a passionate member of the Northern Ireland Beekeeping Association, works alongside his father Leslie to tend to colonies of bees in the lush surroundings of ‘The Garden of Ulster’. Together, they create small-batch, locally harvested honey with a flavour that reflects the richness of the Northern Irish landscape.
The honey’s name – Waggle Dance – is inspired by the bees’ unique figure-eight dance, which commonly indicates the best pollen-gathering spots to their hive mates. It’s a perfect symbol of nature’s harmony and the spirit of community behind this delicious product.
Whether drizzled over your porridge or dolloped on your yoghurt, a spoonful of Waggle Dance Honey is something to savour. Its rich, floral notes are now featured at breakfast across our six hotels, complementing White’s Oats from Tandragee, Farmview Dairies cream, or a splash of Bushmills Whiskey.
Beyond breakfast, our chefs are incorporating this golden goodness into seasonal menus, including glazing locally grown vegetables as part of our ongoing 'Love Local' theme, celebrating the best of Northern Ireland's produce.
