Meet The Supplier: Wilson's Country Potatoes
At Hastings Hotels, we believe the best dishes begin with the best ingredients – grown with care, harvested with pride, and delivered with integrity. That’s why we’re delighted to shine a light on one of our valued suppliers: Wilson’s Country, Northern Ireland’s leading potato producer.
Rooted in County Armagh, Wilson’s Country has been growing and packing potatoes for over 30 years. This family-run business is deeply committed to sustainability, innovation, and quality, which are all values that mirror our own. Their dedication ensures that every potato we serve is bursting with flavour, goodness, and the unmistakable taste of home.
Handling approximately 1,000 tonnes of potatoes each week and employing around 120 people, Wilson’s Country works with a trusted network of growers cultivating over 1,250 acres of planned potato production. Working with over 25 Irish growers, they ensure a year-round supply of the very best spuds.
At the heart of Wilson’s Country is a determination to do things the right way for their growers, the land, and future generations. They offer comprehensive agronomic support, from field selection through to harvest and storage, while also assisting growers in meeting industry-leading standards.
Their environmental stewardship is just as impressive. Wilson’s has embraced eco-conscious farming techniques, reduced plastic packaging, and invested heavily in low-carbon technologies.
So, what sets Wilson’s potatoes apart? It’s a blend of years of expertise, meticulous care, and future-focused farming. With their own growing area expanding and a state-of-the-art processing facility – including a £2 million Anaerobic Digestion plant – they offer full crop clearance, ensuring nothing goes to waste.
Sustainability is woven into everything they do. For the past five years, Wilson's has proudly operated entirely on 100% green energy, demonstrating a steadfast commitment to environmental stewardship. Last year alone, they achieved a remarkable 42% reduction in greenhouse gas emissions, contributing to an impressive total decrease of 75% since 2019. The company has forged a strategic partnership with McCulla Ireland, leveraging their fleet of trucks powered by renewable biomethane gas, which significantly lowers their distribution carbon footprint.
Wilson's has also implemented a state-of-the-art water recycling facility and utilises a natural borewell, ensuring that their water sourcing is both sustainable and efficient. The SBTi has recently approved Wilson’s Country’s near-term science-based emissions target.
You’ll find Wilson’s Country potatoes at the heart of many of our menus – whether it’s creamy mash served with Mourne lamb, hand-cut chips alongside fresh-caught fish, or roasted baby potatoes bringing out the sweetness of seasonal vegetables.
In our kitchens, chefs love their versatility and consistent quality. Whether boiled, baked, crushed, or crisped to perfection, Wilson’s potatoes elevate every plate and are a true local hero in our culinary story.
