Seafood remains an important part of many of our menus, from casual restaurant dining to special occasions, or our monthly seasonal chef-led creations. This month, our signature dish celebrates the outstanding quality of Ewing’s salmon with our Cajun-Spiced Ewing’s Salmon, served with crushed potatoes, pickled vegetable salad, and chimichurri. Designed by Ballygally Castle’s Head Chef, Kevin Osborne, the dish showcases the versatility and freshness of Ewing’s seafood, balancing bold Cajun flavours with vibrant seasonal ingredients.
